Pumpkin in India is known as kaddu, petha or kashiphal. this kaddu ki sabzi has 3 main ingredients that is onions, spices and pumpkin.

This is my mother recipe which is simple but delicious it has the combination and balance of two flavours that is sweet and spicy.

In winters everyone yearn for easiest comfort meal at the same time it is wholesome and soothing, pair this kaddu ki sabzi with roti or paratha and with some chutney or pickle.

This recipe can be made under 25 minutes and if you are working or for kids lunchbox you can chop the kaddu at night and keep it in an airtight container then use it in the morning. It will make your work more easy.

Ingredients

Pumpkin/petha: petha or kaddu is the key ingredient in this recipe. kaddu is very nutritious and promotes weight loss.

I have used ripe yellow pumpkin if you have green pumpkin then you can chop it without peeling and use it in the sabzi.

Onion & green chilli: sliced onion and chopped green chilli just add a little flavour to the pumpkin. you can also use dried red chilli for more spicy flavour.

Other: it includes spices like degi laal mirch for little red colour, salt to taste and other spices.

you can also add dried fenugreek leaves or garam masala powder or ginger garlic paste to give it extra flavour.

How to make kaddu ki sabzi

  • In the Kadai or a deep bottom pan add mustard oil, sliced onion and chopped green chilli. we don’t have to saute the onion so add in salt, red chilli powder and turmeric powder.
  • Mix all the spices with the onion and cook it on medium flame until the onion turns transparent, don’t overcook the onion or make it golden brown.

  • When the onion turns transparent add sliced kaddu as shown in image above then add water and mix it well.
  • Cover and cook it at low flame until the water is dried and the petha or kaddu is cooked or soft. It would probably take 12-15 minutes to get kaddu cooked.
  • When the water is dried and petha is cooked add sugar and mix it well then add chopped coriander leaves again mix.

  • Its ready to serve. serve it with poori or chapati, chutney or pickle.

Top tips

  • If you don’t want to add onion then skip adding it and the rest of the process will be same.
  • You can substitute sugar with the same amount of jaggery. If you don’t prefer adding sugar or jaggery then skip adding it.
  • You can also use green kaddu instead of yellow one as well.

Kaddu sabzi|petha sabji recipe

Healthy, quick, vegan and gluten free kaddu ki sabzi. It is perfect for lazy days when you want to make some quick meal.

Ingredients

  • 250 gram petha/yellow pumpkin 
  • 2 tablespoon mustard oil
  • 1 medium onion(sliced)
  • 2 green chilli
  • 1 teaspoon salt 
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon degi Lal mirch powder
  • 1/4 cup water
  • 1 tablespoon sugar
  • 2 tablespoon chopped coriander leaves 

Instructions

  1. Add 2 tablespoon mustard oil in the kadhai then add 1 sliced medium size onion and 2 finely chopped green chilli.stir it.
  2. Then add in 1 teaspoon salt, 1/2 teaspoon turmeric powder and 1/2 teaspoon degi Lal mirch. Mix it well and cook it on medium flame.
  3. When the onion turns transparent add thinly sliced kaddu and 1/4 cup water then again mix. cover and cook it at low flame until the water is dried and the petha or kaddu is cooked or soft. It would probably take 12-15 minutes to get kaddu cooked.
  4. When the water is dried and petha is cooked add 1 tablespoon sugar and mix it well then add 2 tablespoon chopped coriander leaves mix it nicely.
  5. It’s ready to serve
