I have seen many recipes on internet that need whipping cream or fresh cream for making this recipe. But this fruit cream is prepared using malai.

Malai is collected from the surface of the boiled milk, it is the thick white layer which is extracted from the boiled milk. It is used in Indian cooking for sabzi, curry, sandwiches, baking and sweets.

I have collected malai 4 to 5 times and used in this recipe. don’t use the malai if it is old then 2 days.

In India whipping cream is not easily accessible and is expensive as well. malai is very easily available at every Indian kitchen and it is preferred more than whipping cream. banana and malai is the base for this fruit cream recipe and rest you can add any seasonal fruits, dry fruits according to your preferences.

This malai fruit cream is very popular in my family, I am having this since my childhood and I love it. I have learnt this recipe from my mum.

It is extremely yummy and it will become your favourite go-to fruit dessert.

  • Do not collect malai for more than 2 days as it may not taste good and can be formed into makhan. fresh malai=yummy fruit cream.🙂
  • If banana is not ripe enough then you can increase little amount of sugar.
  • This fruit cream can be stored for 2 days in winter and 1 day in summer. store it in an airtight container in the refrigerator.
  • If the fruit cream becomes thick add a tablespoon of milk in it and you will get the right consistency.
  • Add any fruits of your choice, you can also add nuts and seeds.

  • In a blending jar add ripe bananas and powdered sugar. blend it until smooth mixture is formed.

  • Then in the smooth banana mixture add yogurt and malai. Blend it for only 5 to 6 seconds not more than that. if you blend it for more time then it may turn into makhan. So remember not to blend it for more then 5 6 seconds.
  • Smooth and creamy mixture will be formed after blending.
  • Transfer the malai mixture in a bowl and add chopped oranges, strawberry, apple and pomegranate seeds in it. Fold & combine it nicely with a spatula. Don’t over mix it.
  • Also make sure to remove seeds from oranges and then add in the fruit cream.
  • You can add any fruits or roasted or blanched nuts of your choice. top the fruit cream with some fruits and serve.

How to make fruit cream|fruit cream with malai

Ingredients

  • 2 cup malai
  • 2 ripe medium size bananas
  • 1 medium size orange 
  • 1 medium size Apple 
  • 1/4 cup pomegranate seeds
  • 1 tablespoon yogurt
  • 4 tablespoon powdered sugar
  • 6 to 7 strawberry 

Instructions

  1. In a blending jar add 2 medium size ripe and 4 tablespoon powdered sugar. blend it into a smooth paste.
  2. In the banana mixture add 1 tablespoon yogurt and 2 cup malai. Blend it again for only 5 to 6 seconds so that everything is combined nicely. Don’t blend it for more than 5 to 6 seconds otherwise malai will be transformed into makhan.
  3. Transfer the smooth banana and malai mixture into a mixing bowl then add chopped oranges, apple, strawberries and pomegranate seeds in it.
  4. Makesure to remove the seeds from the oranges before adding it to fruit cream. you can add any chopped fruits and nuts according to your choice.
  5. Gently fold and mix it, don’t over mix the fruit cream. Top it with you favourite fruits and it’s ready to serve.
